Mussels with Panceta and Creme Fraiche (pic heavy)

I tried this recipe from Food & Wine and it was really good, but very messy and difficult to serve; we ended up going caveman to eat it.
The ingredients all ready to go Cooked Panceta in a Tbs of EVOO until it started to crisp a bit. Added chopped celery, fennel, garlic and red onion. Added whit wine and let cook down some, about 4 minutes Added fish stock. Added mussels and cooked until they opened. Added Creme Fraiche, removed from heat and added parsley, lemon juice and crushed red pepper flakes. Toasted up some garlic bread Added a Bloody Mary Tomato Salad as a simple side
Overall not a bad dinner.

Those are some nice looking mussels. I wonder what they'd be like without the creme fraiche? The stock looks so good by itself.
