wow looks great! I doubted the "fruit & fish" combination until we made some at home earlier this year . . . now Mango Salsa is a staple for us w/ halibut, mahi & grouper. Also like the idea of melting the butter on the fish as it grills - nice!Columbus, OH

I dried the fish off with a paper towel then coat with mayo then rub with Dizzy Pig's Shaking the Tree. Grill hot and direct till the fish turns white. The butter: Let a stick of salted butter get to room temp. Mix the butter with the zest from a whole orange, the juice from half an orange, some chives and some of the rub. Roll the mixed butter in seran wrap or wax paper and chill in the fridge. Add a large slice of butter just before the fish is done.Be careful, man! I've got a beverage here.

so, mayo on fish? that never would've occurred to me. thin coat? is that just for the oil content? It looks great, I assume you couldn't tell there was mayo by the time it was finished?

Correct. No flavor at all. It keeps the fish from sticking to the grill and helps keep the rub on.Be careful, man! I've got a beverage here. -
