14 pound prime brisket - thanks @pantsypants. Under direction from @travisstrick with modifications. Hockey Valley Dark Ale, rib rack and Macgyver-ed pan to fit the Large. Roasting tomatoes and sweet peppers alongside for soup. Roasted corn to follow for the big old meal to tonight. Here's a few pics at start and at 5 hour mark with rib rack removed. Finished pics to follow.

@pantsypants Brisket was fantastic. Very tender and melted like butter. Not sure it that was because it is a prime cut or that I wet aged it until yesterday. Think that was about six or seven weeks ago I picked it up? Definitely in for more of those.@blind99 Simple soup. Bunch of tomatoes in a pan with Italian olive oil. Bell peppers on raised half moon grid. Dome at 350 until both softened. Quartered the peppers and both dumped in a pot with a little chicken stock and then whacked with hand held grinder thing until no chunks. Add more stock to desired thickness. Leave on egg, to near boil.
