I thought I would start small with a Cornish Hen. Marinated with olive oil and greek seasoning. 375 dome raised direct.

Yeah, spatchcock is when you take the backbone out and cook breast side up...flattening it so it cooks evenly. There is a great tutorial on nakedwhiz.com
