Leg of Lamb w Greek garnishes

I don't post often but I thought I would share this dish as it is one of my favorites. This is a grass-fed boneless leg of lamb that I pound out and tenderize and rub with an oregano, salt, pepper, garlic, red pepper, and olive oil rub. I cooked this raised direct to a medium temperature and then served with a side of Greek garnishes. Sliced Kalamata olives, tomato, feta cheese,red onion, cucumber, Greek yogurt, mint, lemon wedges, and a dressing to top. Grill some pita bread and then slice it into triangles then top with sliced lamb and various garnishes. Enjoy w a cucumber basil gimlet to start and a Snowden 2010 merlot to finish

Great looking meal. I like to sometimes use zaatar as part of the seasoning and use rosemary twigs for smoke. Got a few bushes in the back yard..
