    Man... The endless possibilities... I like the new Texas Pete Chi (Siracha sauce).  I think I like it better than the original (or the popular one).  

    No particular order: 

    1 - Texas Pete
    2 - Cholua
    3 - Valentina (black label)
    4 - Franks Red Hot
    5 - Siracha (Texas Pete brand)
    6 - Siracha ( the rooster one)
    7 - Tapatio

    Henry's Hot Sauce out of the Shenandoah Valley is good. Like the Naga Jolokia and the African Fatali in particular.

    Used it for several years. Very happy with it. The most used at my house is the Crystal.

    @Mickey, have you tried Valentina before?  I love Cholua too, but Valentina hits the spot lately.  There is a white and black label.  Black is hotter than the white.

    Kahn's island sauce, if you can find it great flavor! I have also tried "The second dimension" -- the hottest in the world made with 40lbs of ghost chilis, I seriously thought I was going to die. Not recommended.

    Homemade authentic Mexican

    • ½ medium onion, diced
    • 3 cloves garlic, minced
    • ½ ounce arbo chili peppers (40 ea.), pan roasted
    • 1 cup chicken stock
    • 4 medium tomatos, roasted

    Pan roast the chili peppers until lightly browned.

    Peel and dice the onion.

    In a blender add the chili peppers (including stems) and the onion, blend adding chicken stock as necessary. Transfer to a bowl.

    Meanwhile roast the tomatoes under the broiler until their skins are browned.

    Blend the tomatos adding chicken stock if necessary. Add them to the other ingredients and stir well to blend.

    Store in the refrigerator.

    Check out Palo Alto Firefighters Pepper Sauce.  Found it while I was in Key West at the hot sauce store "Peppers."  Great heat and flavor.  They also make a habenero version for additional heat. Although pricey at Peppers, I found they sell it direct from Palo Alto online and its much cheaper.
