Thanks man. From start to galantine 30 minutes. Not to shabby for my second time I guess. ;-)

That man is amazing. I'm pretty sure he could debone and galantine in his sleep.

Pepin could rebone the chicken! Its amazing watching a master at work. When I think about something new to cook I think what would Pepin do? With an Egg twist of course. I have to wear ear buds watching his videos on the iPad now since Im doing Pepin marathons now :)

So were does the relleno come in ?

I did not have Big Tom's to stuff so as you can see what I did to do this with regular roasted hot Hatch. Is that what you meant? That and traditionally a relleno is fried but, to do that and then place in a wet galantined bird the texture would've been mush. So, there ya go.
    Big Jim's! Lol :))

Watch the Pepin YouTube video IMHO it's the most informative out there.

Looks awesome! I've never had the privilege - do hatch chiles pack heat or just flavor?

Both. Really depends on what you buy. And like any pepper each one is a little different as far as heat. If you don't care for a lot of heat I'd suggest going with Mild Hatch. We prefer a mix of Hot & Mild.

I went through the same thing rather recently and things came up better in the end. The job market isn't what it was 10 years ago but it's much better than it was 5 years ago. Keep your head up, it's not the end of the road, just a speed bump.
