Will this still be good?

Made this last Tuesday or Wednesday and saved the leftovers in a saran wrapped bowl in the 'fridge.

Would you use it?

Want to use it tonight as a glaze for cedar plank salmon.

Blackberry Grilling Glaze


1/2 cup blackberry preserves
1 1/2 cups ketchup
1/4 cup brown sugar
1/4 tsp cayenne pepper
1/4 tsp mustard powder
2 tbls red wine vinegar
1/2 cup fresh blackberries

 

Add all to non reactive pan. Bring to a boil, reduce heat simmer 10 mins. Stirring constantly. Blend in blender* or use an immersion blender. Let cool.

    I'd say so due to the salt in the ketchup and vinegar acting as preservatives. As long as there is no off smells or fuzzy stuff growing on the surface, go for it.

    If it spent a lot of time out before you refrigerated it (more than 4 hours) or your refrigerator temperature is above 40F I might toss it, but if neither of those two conditions exist I would use it.  You boiled it. It has been kept cold since then.

    I'd roll with it. If it smells ok, do a little taste. Passes both those...then go for it.

    @Little Steven‌ and @Biggreenpharmacist‌, Just curious on to why reboil it? Should be plenty safe. I would be worried about an off taste or smell from sitting. Just because something has an off taste or smell doesn't necessarily mean it's unsafe, just not palatable.

    Just for the record, I'm the type of guy that throws out pizza if it's sat out for a couple of hours.

    It was not a viscous glaze in it's refrigerated state.

    So I "warmed" it a bit.
