    Thanks for the link. I used to like watching him cook with Julia Child. The part where he breaks the leg with the back of the knife? Yeah I'm guessing that's a lot harder than it looks!

    A deboned chicken with a sage / cornbread / sausage stuffing sounds good this fall. I'd better start practicing.

    My wife eats paleo so I was trying to be considerate of that. Next go round I may roll one paleo & crazy packed with meat and cheese love.

    @stemc33‌ its tough, but not as tough as it looks. It took me about an hour to debone the bird on my second attempt. The toughest part was trying to get the chicken grease off my hands to rewind the video on my iPhone to make sure I was doing it right.

    I'd recommend taking a shot at it sometime when you're not pressed for time. Try deboning on a Saturday morning/afternoon (assuming you work on the weekdays). That way you can take all the time you need without worrying about getting food on the table in time.

    The key for stripping the carcass is feeling for the joints and sliding the knife in between the bones.

    The hardest part for me was figuring out what I should be cutting to get around the joints in the leg bones.

    Give it a shot. At the worst you can just save the bird for soup.... My first attempt will be making a stew as soon as I get back from vacation.

    Not much I can say that has not been already, but that is a great looking cook.  You did a really good job deboning that chicken for the first attempt.  I don't know that I will ever attempt it, but seeing your result, I just might!

    @ChillyWillis‌ My favorite part of the (Pepin) video is when he says it shouldn't take more than a couple of minutes to debone a chicken. =))

    Took me about 1 hr to debone, prep stuffing, stuff and galantine. During that I had the egg preheating etc. And as soon as I put it in the egg I started on the rest of the meal. Then I chilled out. ;-)

But, when you've done literally close to probably 100 w/ everything as far as spices, rubs, herbs, basted, injected, inverted, blah, blah, blah. It was time for a change up pitch. Trust me I'll do more Spatchcock (I've done them enough I can virtually do it in my sleep).
