I used the brine from Centex recipe for the first time. I really liked it and will do it from now on.
Reverse sear to 120 then nuke it on both sides. topped with bacon jam.
Be careful, man! I've got a beverage here.

They look great. Bacon on pork? Sort of funny, but I'm sure it worked nicely.I've got a local farmer who sells organic pork chops that are cut nice & thick. I've pulled some out of the freezer for tonight's dinner. These don't require a brine, so I'll hit them with salt & pepper and a mild smoke. Simple, but great.Will serve with grilled zucchini with a jalapeño pesto - just got the recipe of Bobby Flay's BBQ Basics. Got a bottle and not used yet. Thoughts of put on 10 min before removing ?Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.
