    I have never posted, always reading. I started reverse searing and then I ruin them. Yes I slice them open long ways and stuff with Feta. Yum.

    Aight, busy morning, but all my efforts were worth it in the end.  I will make a few tweaks next time I do the monsters.  3 hours in the brine and i'll go raised indirect the whole way to compare the final product.  The meat off the bone and fat band was freaking glorious.

    A lil prep work.

    Note, only a half stick of butter went in my mushroom cream sauce.  lol

    but today, we're tossing in some green beans.

    Some hot milk for my garlic mashed potatoes.

    After I knocked out the sides, I shifted my attention to the chops.

    Roasting @ 250 grid with apple chunks

    I removed them from the egg at 115 internal, no flip.  Pan seared in bacon grease.

    Right before they were done, I dumped the grease, add a little butter and a few sprigs of thyme.  Coated each side with a few flips, then pulled.  Pulled at 145 internal.

    These were awesome!!  The texture was similar to what I get from tenderloin.  Tender and juicy.  Again, that meat off the bone and fat band yall.  =P~   The only sliced shot I got cause I was freaking hungry!

    Wrights bacon makes a 3 lb bag of ends and trimmings. I think its $7. I buy it and make grease out of it. It's good to keep a mason jar full of sweet delicious bacon grease around the kitchen.

    I've had it maybe two months and it was still good. Once you have it, you will find many many uses for it.
