Spatch'd of course. Butchered Saturday, brined overnight Tuesday, rinsed and rubbed uncoverd in fridge for a bit then raised direct around 400. I don't know if it was a mind thing or not but it was amazing! My wife hasn't stopped raving about the bird. Photobucket Pictures, Images and Photos Photobucket Pictures, Images and Photos Photobucket Pictures, Images and Photos It did look much "meatier" than a store bird right out of the gates.
