    Hey...no pressure, huh?

    Well, I bought it at Eataly, Mario Batali's Italian Market on steroids here in Chicago. So I'm paying a premium for the wow factor.

    I will say that I've purchased dry aged rib-eyes on 6 occasions from there are they were the best steaks I've ever had at home or in any major steakhouse for that matter.

    I'll reverse sear the beast and gladly post the cook.

    Look, I'm pretty sure you don't want to eat that. Do you realize that was cut off a piece of meat that was hung for several weeks to rot and dry out?

    I'll help you out here, just let me know if you need my assistance, I'll PM you my shipping address and you can overnight it to me packed with some dry ice in a foam cooler. I'm pretty sure that will work, as I have seen others that have received rotted meat packed like that.

    Anyway, just looking out for a fellow egghead. :))

    @stemc33 don't know how much the bone weighed. I know I paid for the "bone show" but I just wanted to cook this for that reason.

    All in all, t was eggcellent but will probably stick the the "normal" bone-in ribeyes I've been getting from Eataly.

    This didn't have the beefy/tangy dried aged flavor profile the others did.
