Since there are no posts yet, I'm going to go ahead and interject this question:
Do the wings have to be cooked between now and the deadline, or are past wings OK? If so, how far back?
NOLA -
Hmmm. I'd say let's make it current. I've got a database full of old wing cooks to choose from. That wouldn't be fair.

I've been thinking about wings allllll day long. Thanks a lot, @Griffin. ) Decided to come up with an original recipe tonight. I guess I'll call them "Mandarin Sriracha Wings." I didn't measure, but Lord.Have.Mercy they were good!! =P~ The ingredients included Orange Juice, Orange Zest, lots of Sriracha Sauce, lots of Honey, Soy Sauce, Oyster Sauce, Scallions and a little Corn Starch to thicken. Brought those ingredients to a simmer and once thickened, transferred the sauce to the fridge to cool.
For the wings, I decided to make them into Chicken Wing Lollipops and fry them up in the CI skillet on the Mini BGE. They were simply seasoned with Sea Salt and dusted in Corn Starch and Flour.
Brought the oil up to about 375 deg F and fried them up until they were finished.
Dunked the meat portion of the Chicken Wing Lollipops in the Mandarin Sriracha sauce and finished them with a little more Scallions. Served with some Onion Rings. These were some amazing wings, and they were not messy in the least, since I left the "handle" of the lollipop sauce-free.
Gotta love the Mini BGE for frying purposes. And don't get me wrong -- I love all sorts of varieties of chicken wings (smoked, grilled, fried, sauced, seasoned only, etc). But tonight, I was craving the classic fried chicken wing that is tossed in a nice spicy sauce to finish.
Merry National Chicken Wing Day, everyone!

Ok, got mine done! Blackberry Jam Sweet, Spicy, Tangy Wangs! Made this a long time ago with stuff in the cabinet and wanted to repeat it. Found a recipe that I loosely followed and it was outstanding. A bit sweet, next time I'll add more cayenne pepper.Made the base out of this, reduced it down with butter and maple syrup. Added ginger, cayenne pepper, Crushed red pepper, S/P, Worcestershire, Siracha and bee pollen. I let that simmer for about 2 hours and reduce while I got the grill ready and smoked the wings. On the wings I put salt, pepper, onion powder, garlic powder and cayenne pepper. Smoked at 350 indirectI dusted some with red pepper flakes and some with toasted sesame seeds. They both added some interesting dynamics. The flavor was great, just a bit sweet.XL, Small, Mini & Mini Max Green Egg, Shirley Fab Trailer, 6 gal and 2.5 gal Cajun Fryers, BlueStar 60" Range, 48" Lonestar Grillz Santa Maria, Alto Shaam 1200s, Gozney Dome, Gateway 55g Drum
