    I can't wait. Ive never done one like this. It's starting to feel like following a cook on the Sous Vide forum though. Check in every 5 days and "still in process". I'm sure the payoff will be the same though (awesome) and this place is much funnier than that forum. Those people do not take strangers in to their homes and take those kids for tractor rides. They wear turtle necks and spend their adult life afraid they may fart in public. Very stuffy. I'll take smoked beef clod and 4 hog rigs any day.

    Again thank you. I love to cook and I love playing with children. I'm practically a big kid myself. Hence all the John Deere stuff. I don't need it. But the kid in me made me buy it just to play on. If you are ever over my way stop in brother. You are one of the ones that I would most like to meet. I got to meet the @Biggreenpharmacist‌ and his fine family last week. It was both a honor and a privilege to say the least.

    You haul that bad boy to Arkansas and I'll cook one. I did look at that smaller cabinet we discussed. I dont know if wife will go for it but she didnt shoot it right down when I mentioned it.

    The clod removed from the smoker at the 28 hour mark. Why? At this point I'm going to inject the Teres Major only with beef broth. I will not touch it or disturb it any farther for the remainder of the cook. Note: I only inject the Teres Major not the entire clod.imageimageimage

    I used to use bouillon until my friend Kevin from Chef and the Fatman suggested I use better than bouillon instead he said there are more herbs and spices in it. If you haven't used it it comes in a paste.

    Better than bullion is excellent. The purpose of this injection was just to keep the Teres Major from drying out as it is the leanest part of the clod. Wasn't trying to add a flavor profile. But I do use the better than bullion that you speak of on certain things.

    I have never had a beef clod, but i did see it on the menu at Manny's Steakhouse in Minneapolis of course I get the Cowboy Ribeye everytime i am there.

    you have no idea. They buy nueskes "end cuts" which are very thick chunks and slow roast them with BBQ sauce. Insanely good and better than any steak in the house. I eat there a lot. I would just get that and tito's if it were socially acceptable.
