Charbon,
I saw a lamb shoulder at the store yesterday. Has anybody tackled one of these yet? It looked a lot like a pork butt, so my guess is it would be a good candidate for a low 'n slow.

WDAN,
They are full of bone and fat but the meat is delicious. I roast at 300 dome untill meat is 170. Marinate overnight then roast indirect with rack in drip pan- to catch the fat. Watch out for "big lamb" when it comes to the shoulder cut ---it's mutton. But that's another story.
