Rib Trimmings Ideas???

Smoked St. Louis style ribs yesterday and decided to save the trimmings...got out the kitchen aide meat grinder and ground them up and turned them into rib patties. Grilled them and and covered them in some sauce and it blew the McRib out of the water. Anyone else found a good use for rib trimmings?

I usually will just apply the same rub I'm putting on the ribs and grill them with the ribs. After about 30-45 min I will wrap in foil with sauce for about another 30-45. Pull out of foil and put on grate for about 20 min. Serve as an appy.

I like braising mine with aromatics (onion, garlic, chiles) and Southwestern rubs to make great meat for pork tacos.
