Spatchcock Question

I am currently cooking some ribs doing the 2-2-1 method. After I pull the ribs I was planning to get her up to 400 and cook a spatchcock. However this is one big chicken, 6.5 pounds! I am afraid it will take too long and I don't wan to hold the ribs forever. So my question, can I throw the chicken on for the last hour with the ribs to get it started and then take the temp up after I pull the ribs?
Thanks

I wouldn't put the chicken on the top rack over the ribs and if you're indirect on the ribs at a low temp it will be slow on the chicken. Ftc the ribs and go raised direct on the bird. 1.5 hours?Green egg, dead animal and alcohol. The "Boro".. TN

Ok so I can FTC the ribs? I thought that was just for big pieces of meat. Thx

+1 ^^^^ You will be dripping raw chicken juice on the ribs which will not have potentially cooked through when you pull the ribs. The chicken will still be dripping raw juice on the ribs when you pull the ribs I guess is a better way to say it. And it will ruin the bark on the ribs.They/Them

OK, if side by side, no problem, won't hurt to start the chicken low and bring the temp up later. Just monitor breast meat and don't overcook it.They/Them

Dinner was a huge success. I cooked the chicken along side the ribs for the last hour and the took it up to 400 and if finished perfect in another 1 1/4 hour. Delish. My husband thought the ribs were too soft so we may try another method but my father said they were the best ribs he had ever eaten. I guess different strokes ......

Not to get technical, but according to chemistry alcohol is a solution...

Sounds like you did a good job! The lack of pictures, however, will cause others to doubt that this really happened.---------------------------------------------------------------------------------Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.____________________Aurora, Ontario, Canada
