    <br/ I bought this at Fresh Market but there is actually a Fish Monger really close that makes a trip to the Gulf once a week and will bring back whatever I need. If I let him know by Monday night I will have it on Thursday. Pretty sweet deal for those of of not on a coastline.

    His company is Par-K. I couldn't tell you his name to save my life and that is sad for the money that I spend with him. I just send emails on Monday of what I want and get emails when he gets back and is ready for me to pick up. Helluva nice guy and make so e jammin Gumbo and Étouffée

    To be honest I am not sure. We checked out his place of business,bought some fresh shrimp and fresh cooked gumbo and just started ordering via email. Awesome system he has worked out. I will ask where he buys at when I pick up the next order. Shouldn't be too long as my friends are asking me to do a crab boil soon.

    Great looking cook @Mattman3969.  Stupid question... when you cook the flounder on the bed of lemons, is there any need to turn the fish?  Trying to figure the logistics of that if its needed.

    No flipping. Just treat it like an indirect cook. Cook was at 425 raised direct on the small. Took maybe 12 mins for the Flounder to get done. No such thing as a stupid question!

    It really depends on the fish. If it is something like Talapia or Flounder which are crazy flaky and will break apart when done I use this method. Sometimes I use limes or oranges just depending on the taste I am trying to achieve. If it is a more solid fish like Orange Roughy I will go straight to an oiled grid.

    It's the best way beside cast iron that I have found to do flaky fish. I think it was @dmw that turned me onto it.
