I have made a few of those devils and I use Italian Sausage along with sauted mushrooms, onions, and green peppers with slices of pepperjack cheese. I don't like the crumbled bacon inside like it called for.

Its been a few days, but the BB came out nicely. I mixed up 2lbs Jimmy Dean spicy sausage, 1lb ground chuck, 3 tsp fish sauce, a healthy dosing of Dizzy Dust, and mashed the pile out roughly flat about an inch thick and covered with shredded chedder. I then made the bacon weave, roughly 8 strips by 8 strips, coated what would be the outside with fresh cracked pepper, flipped it and gave the inside a coating of swamp venom and dizzy dust. Rolled the meat into a load, then rolled it into the basket weave of bacon. Cooked it for a couple hours at about 350 indirect till 155, then basted with maple syrup, let it go another 15 minutes at 375 then FTC'ed it to take to the party. Once I sliced it the whole thing disappeared in about 10 minutes.
