Sunday Night July 4th Close Out Cook...
Family has all left and things are kinda' back to normal. Decided I didn't want left overs and checked out a new butcher shop that opened about 20min away called the Meat House. They will hand cut any steak you want and have choice, prime, Waygu, and dry-aged meats.
Picked up a prime rib eye for me and two filets for the ladies. Going to do them caveman style down on the coals, and pair them up with a nice salad.

As always both the food and pics are spot on my friend. One question. One real thick meats do you prefer a indirect roasting along with the coal sear or just a coal sear only if I may ask? Again every thing looks absolutely fantastic my friend.Location- Just "this side" of Biloxi, Ms.

@hapster ya know at 1st I was like holy $hitball$ that's expensive! And then I looked at the cuts again. And I'd do it for me & the Mrs for sure. Would I do that for a large group (hell to the no). Lol.

I do them entirely on the coals... One thing I did learn this time, more lump. Not that I ran out, the leftovers from my cookout and butts a couple of days ago were plenty to do the steaks, but they were too low in the fire box and restricted the surface areas of burning lump. Next time I'll be sure and top it off first to give me a larger coal bed.SGH said:@hapster

Here it is plated... Locally sourced prime grade. Have to say it was one of the best tasting steaks I've had in quite a while. Def a great first impression of the place.
Managed to get it right and the cook went perfect. My girls loved the filets. I have Elise some of the ribeye collar; I think she now thinks the filet isn't as good as she once thought )

I've never regretted buying beef at higher prices, even when wincing LOL... I just took the family to dinner and it was $118 with tip for some crappy fish tacos, some Calamari, a couple of fish and chips and some chicken tenders for my granddaughter. You can buy a lot of expensive meat for that much and still have enough left over for sides. This time we splurged for the conveniences of someone else doing the cooking and cleaning. Other times we may splurge with better cuts of meat.XL BGE; Medium BGE; L BGE
