This will be only my second brisket, 11 # packer, next weekend. Franklin or Travis method? If Travis wins, I need to order some Allegro.

Okay a no brainer-but rather than offer my choice, think about the cook method here-low&slow over smoke or braised?? Happy Birthday USA!Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

I would not normally braise, but Travis method has a lot of fans hereXLBGE, Small BGE, Homebrew and GuitarsRochester, NY

The @Travis method has a place especially with flats but even he has come over to the dark side and gone with the traditional method of brisket cook. BTW-he (@Travis) has won a few competitions since seeing the light. Now that I have tilted the playing field...Happy Birthday USA!Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Nothing against the "Travis method" aka braising, but I'm only smoking brisket - I can braise in my oven.
