Really nice thick chops. Done direct at 500 working down to 400 with my own brown sugar rub. Did enough for a second meal and some give aways.

@Doc_Eggerton - can you tell me more about your onions. They look great. How long to get them cooked and with a nice texture? Are they rubbed with brown sugar rub?

The onions were just thick slices, with some EVOO, smoked paprika, salt and pepper. Went on as far from the heat as I could, and stayed while the chops cooked, about 25 minutes. They were soft but firm.
