Tonight's humble cook.

Nothing special tonight as the weather is getting bad. Just some marinated chicken breast and corn. Getting a late start but oh well. I'm hungry so here goes. Going to do a reverse sear on the breasts. The corn I will cook raised direct just to the point of tender.

    I also wire brush them while they are hot. I have been told that I shouldn't but it works like a charm. Hasn't hurt them so far.

    I agree - shouldn't hurt them.  That ceramic is not vitreous.  A scratch shouldn't cause it to cleave.

    Lookin' good.  Yeah, the wind here reminds me of a tropical storm.  Margaret Orr says we're all gonna die, so it's probably nothing.

    I used something that I have never tried. It's called 30 minute marinate. My DIL loves it and requested it so I thought I would give it a try. Thanks for the kind words my friend.

    Chicken is done. Did not reverse sear due to severe lightning. Just let it cook indirect at 425 until internal hit 155.

    1) the breasts don't do the marinade justice if they're boneless
    2) no foil or drip pan to protect the snow white platesetter?

    Most of the time I do either wrap the plate setter or use a drip pan. I was running real late last night and the weather was getting bad so I didn't. I'm lazy too. That's the biggest reason. ;)
