I have a family of 4, but I love to cook for an army! If you are like me, you probably run into some leftovers. I always try to be creative with the food that I have leftover. Here is my latest creation...
Baby Back Rib "Grilled" Cheese
I took a couple pieces of thick bread and slathered mayo on each side, added a slice of sharp cheddar cheese to each side & added my sauced baby back rib meat. Once the sandwich was made, I brushed the top and the bottom pieces of bread with canola oil.
I cooked the grilled cheese direct at 350F on the Egg. Keep an eye on it because it could get away from you.

I had some left over ribs and made a sort of Texas Hash.
Sautéed up some onions and peppers, and mushroom. Added in some hashbrowns and S&P. Let that come together for a bit in the pan. Added in the chopped up rib meat and added some BBQ sauce. Yummy.

Leftover ribs do make good sammiches and so much better than a McRib. Never thought to add cheese to it. Here's one I did a while back.

Thanks!! I love BBQ, but can only eat for about 4 days in a row. With leftovers, I try to create a non-bbq type meal using it.
