Ultimate Fried Shrimp

Obtain fresh shrimp from the Gulf of Mexico. Do not substitute any other shrimp for fresh Gulf shrimp.
Peel and dehead shrimp.
Soak shrimp in whole dairy fresh milk for 4-6 hours. Cover them entirely with the milk and set in the refrigerator.
Remove after 6 hour soak in milk.
Dump shrimp in sink. Do not rinse. Sprinkle with a light coat of spice of your choice.
Then coat with your coating of choice.
Deep flash fry in peanut oil at 525 degrees for 35 seconds and strain them on a rack. Not paper towels! They will be soggy if you dump them on paper towels. A word of caution-Be very cautious when heating oil this high. It can run away very quick.
This is about as good as shrimp gets my friends. Hope you enjoy!!

    Sorry but, we agree to disagree. Get the freshest you can obtain. For me it is Atlantic fresh caught here daily. Although I hear the Gulf Coast skrimps don't need oil added >:)

    It's called flash frying. It crisps the outside and leaves the inside nice and moist. You should give it a try. It works incredible.

    What vessel did you fry them in? Wok on the Egg? DO on the stove? Deep fryer? CI skillet?
