Big Fat Ribeyes...

So...I bought a whole boneless vac-packed rib at Costco three weeks ago and just threw it in the fridge. Cut it into 1 3/4in steaks today. Rubbed with Mickey's coffee rub and cooked at 275* dome indirect until 108* internal. Pulled and got the Egg to 700* and seared 1 1/2 min per side. They ended up at at 123-125*. They were without a doubt, my best steaks so far......

    Another in the reverse sear camp! -Excellent.
    BTW - do you have a Bulk Barn near you? They have Ancho chili powder.

     Nice! I just cooked my first steak on the Egg last night! I can't believe how perfect it came out. I had my dome temp in the 200 range (after winding past 700 :) )

    Looks awesome. Perfect wall-to-wall pink. I started cooking steak reverse about 2 years ago, and have never gone back since!

    Looks absolutely fantastic!!

    I have use this method a couple of times and have had good success as well.
    However, I find that the thicker the steak the better this method works.

    Great photo too.

    I had to get on a weight loss bet because of the egg... lost 20, best shape of my life! More salmon & salad than red meat & root veggies, but whatever...I'm still egging..
