Trying Smoked Salmon

My grandfather was a commercial salmon fisherman in Pacific City, Oregon, fishing with the dory fleet from the beach. I used to love going out with him during the summer.
Anyhow, I decided to try some smoked salmon in his memory as he is the one that got me hooked on it.

Removing the pin bones is a pain in the ass. Anyhow, I will be flipping the filets (2 wild caught Sockeye from Whole Paycheck to the tune of $58) in the morning and throwing them on the Egg in the early evening.
I will post some pics when finished.

Just did some last weekend. Easy peasy. Salmon, DP Raging River and a cedar plank @ 350. Awesome. The egg produces such moist results.

I use water, morton tender quick, and brown sugar. Rinse, dry, let sit in fridge until pellicle forms. Smoke at 200 degrees with Sugar Maple and its always good.Dearborn MI

Last Saturdays salmon. Cooked after attending the Peoria eggfest. Nice fish market right down the street.
