Trying Smoked Salmon

My grandfather was a commercial salmon fisherman in Pacific City, Oregon, fishing with the dory fleet from the beach. I used to love going out with him during the summer. Anyhow, I decided to try some smoked salmon in his memory as he is the one that got me hooked on it. 

Following Alton Brown's recipe: http://www.foodnetwork.com/recipes/alton-brown/smoked-salmon-recipe.html Removing the pin bones is a pain in the ass. Anyhow, I will be flipping the filets (2 wild caught Sockeye from Whole Paycheck to the tune of $58) in the morning and throwing them on the Egg in the early evening. I will post some pics when finished.
