OT - Outdoor table building questions

Looking to build a table with some shelves and stuff below the table top for outside between the egg and nest and the infrared gasser. My question is how to stain and seal the wood on the table top for 3 season outdoor use and keep it looking nice. (it will be inside for winter.)

I saturated with West Marine Epoxy, sanded, then 3 coats of marine spar varnish. Over two years and it still looks new. The Epoxy will also make the surface very hard, especially if you use a soft wood (I used cypress).

Did any of you coat all wood before assembly, or just coat all exposed areas after the table is put together?

I sealed every piece of wood in that table before assembling and epoxied all the mortise and tenon joints. It could survive a few weeks of flooding if it came down to it.
