    On your egg...

    Kidding (kind of). 250-275 degrees indirect until internal is somewhere between 190-200 (when it feels like butter). Throw in your favorite wood chips and slather it up with a good dry rub. Expect a stall around 160 degrees and make sure you have enough beer to get you through it. Wrap in foil if you need to push through the stall.

    Make sure to put a drip pan underneath it, with some balled up aluminum foil under all 4 corners, so you don't wind up with a mess.

    I fill my drip pan with about half a box of Kosher Salt to soak up the drippings and keep them from burning.
