We had 18 people at the Taco Extravaganza. All four flavors of Tacos were a big hit and they ranked as follows...our signature Baja Wave Tequila Lime Pulled Pork Taco (thanks Frank and Peggie for supplying the pulled pork - neighborhood eggheads) and the Baja Wave Maple Bourbon Brisket Taco (thanks Rutledge and Lisa for supplying the Brisket - also neighborhood eggheads)tied for first place in the tasting. The Maple Bourbon has some interesting flavors like Maple Bourbon Bacon Jam, Green Apple Slaw and Hot and Sweet pickles along with my homemade Maple Bourbon BBQ Sauce.

It took a lot of spices and other stuff to come up with the homemade BBQ sauces, coleslaw dressings, aioli and spreads as well as all of the special side items that accompanied each taco (each had a different set of ingredients on the Queso Fresco got used on more than one taco.

Next on the ranking was the Baja Wave Smoked Chicken Chile Lime Taco.  This chicken paired with Egg Roasted Poblano Peppers, Pickled Lime Onions and an Avocado Sour Cream Sauce were very tasty.image

Tied with the Smoked Chicken was the Baja Wave Grilled Chipotle Lime Tilapia Taco. We grilled the Tilapia fillets direct on a bed of sliced Limes with a Chipotle Lime Salsa. With a Jicama slaw, Avocado Lime Crema Sauce and Goat Cheese.
