Pepper substitute for ABT

Just curious if any of you pepper aficionados can recommend a pepper for an ABT style dish that is not the Jalapeño? I am looking for something larger than the Jalapeño but do not want to deal with the skin removal like you have to do with an Anaheim pepper. Also- I like the shape and spice of a jalapeño over a bell pepper. Just prefer larger.
thanks-

But they're not hot, so you need to adjust the heat in the filling.

@nolaegghead I have got those before and they are awesome, but they are too small. BTW- stuffed with chorizo they are awesome!I am after something larger that stuffed with pulled pork and cheese can make a nice entree eating one or one and a half-Anaheim chili would be perfect but the skin is too thick-Thanks-Proud resident of Missoula, MThttps://www.facebook.com/GrillingMontanahttp://grillingmontana.com

Probably 3 or 4 minutes in boiling water, then ice water so they don't get too soft. Or roast them under a broiler or some kinda fire and put them in a bag to steam.

Bhut jolokia. Serve to people you don't like. Bear in mind, I read nothing but the title.

I use Poblanos (Poblanoes if you're Dan Quayle, or, the other way around if I'm wrong there) though every once in a while I get one that has SOME heat they are generally mild enough for my wife and easy to find at most stores.

Cubanelle peppers are awesome but they don't have any heat. No tough skin at all and the are larger. I do them all the time for KayNOcook.
I'm only hungry when I'm awake!
