Decided on doing some Beef Ribs.. Running the Egg at 325 Dome..Indirect for 1 hour 15 min, then foil for 1 hour 15 min then back on for 20 min for basting. Using a mix of apple and pecan

Just pulled the ribs after 1 hour 15 min indirect at 325 dome..Now going on for a further 1 hour 15 min foiled. I added 3 Habanero's some honey and a little water to the ribs..They smell awesome, great smoke..Greensboro North Carolina

Okay into the home stretch... On for a further 20 min and being basted with the juices from the foiling...If I must say so myself they smell Fantastic.. :-cGreensboro North Carolina
