Crappie Fish Fry!

In-laws came up for the older childs birthday party and brought up a mess of Crappie. Fired up the large to cook up the potatos and the small for the fried fish. We used a mixture of butter and canola oil in a cast iron skillet and the egg was running around 400 degrees as its hard to regulate when the lid is open. Fish was dipped in melted butter, rolled in saltines, dusted with salt and pepper and tossed in the skillet. This stuff is so good we didn't even sit down to eat, just kept snarffing it off the table once it cooled slightly. Both kids loved it and thought they were chicken strips.

Kids even got the smokey joe out and  pretended to cook up noodles as they snacked on the crappie

On a slightly healthier side I wanted to try a couple filets on a cedar board with some galic pepper and lemon pepper.image
