Congrats on the Egg!You can never go wrong with a nice steak! But I wouldn't recommend getting the grill too hot on your first few cooks. I haven't found anything you cant do with the XL as long as you have the right accessories.I just picked up a medium to go along with my XL for those times when I want to cook at two different temps. Chicken thighs rubbed with salt and pepper. The simplicity of the cook will let you see just how good any dish can be when cooked on the egg.

Do you have a decent thermometer to check the temp of what you're cooking? If you don't yet, I would go with ribs or simply cooked chicken (wings, thighs mentioned by Cowdogs, even marinated boneless breasts) where cooking by feel is fine and margin of error is wider.
