Are you looking at pinwheels? Take some flank steak and stuff it with spinach, feta, sun dried tomatoes, and seasoning. Good stuff. I used a greek seasoning but tuscan/italian seasoning works well too. -

This is a great and very easy stuffed flank steak. I caramelize the onions about 20 minutes longer than the recipe. I also use 1/4 teaspoon of cayenne pepper instead of 1/8th in the topping sauce.

I know what you mean by finally getting the time to cook. Between school year end stuff for my youngest, working on my elder daughter's car in case she goes to Texas, visiting my Mom in rehab & shopping for an independent/assisted living place for her, I haven't done any real egging in Weeks!! I have a 4 day weekend coming up and I'm determined to smell like a smokey egg all weekend long!Flint, Michigan

My experience with flat iron is that it is not as uniform thickness as a flank steak... if so, you'd probably need to address that. Lamb of any kind. Stuffed mackerel, tho' where I live, I can only find frozen, and not always the best. On my list of to-dos, marinaded chunks of Queso Fresco on a skewer w. onions, etc.
