Help with my first Brisket

Good Morning:[p]I am about an hour away from putting my first Brisket on the Egg and I havea few questions.
The Brisket has been soaking in a Food-Saver bag all night in liquid and spice marinaide.
I have the Egg loaded with lump and will set it up as indirect heat and put the Brisket on an elevated grid over a water pan. I have the Guru ready to go and need to know what the settings should be. I suppose the meat will be 185 degrees, but not sure about the grid temp, I am guessing 225 degrees?
We cut the Brisket in half because there are only two of us, I would guess the weight is 2.5 pounds.[p]Thanks in advance.[p]Uncle Phil

Typically I pull my off at 190 degree's internal with a grid temp of 235. With that size, you should get there in no more than 5 hours.

Uncle Phil,[p]No problem. Most would suggest that you wrap it tightly in foil and place in a ice chest with a few towels on top as well. Let it sit for 30 minutes with fat side up (yours probably doesn't have a fat side). You can actually let them sit for several hours if need be. I'm only on my 5th or 6th one on the egg, and following advice on this forum, they are getting better and better. Good luck.

Uncle Phil,[p]Funny, I have an Uncle Phil, not the same one though. Anyway, I would pull at 190F, Let er rest under foil and towels in a cooler for at least 1 hour, 2-3 if you can manage waiting that long.[p]Enjoy!![p]Dan
