Just a tiny brisket...

This weekend, I smoked the largest brisket that I have ever done: 18 LBS!! This thing was massive. I went Texas style using  Meat Church's Holy Cow rub. I cooked at 250F using oak & Hickory. I was planning on approx 18 hours, but it was done in 10-1/2 hours. It was tender, juicy & delicious! Love me some brisket! imageimageimageimageimageimageimageimageimage
