There will be a new reversible baking steel that doubles as a griddle

http://www.seriouseats.com/2014/04/the-food-lab-the-new-reversible-baking-steelg.html

This is cool, unfortunately I don't think it will fit inside a large BGE! I don't want to cook pizza in the range, like an animal.

next thing you know is that someone will put a couple pots on it stove top and finds it also works as a huge simmer plate. if he wants to sell it as a griddle he needs to have a 3 sided piece that sits on top on the back and 2 sides to keep splatter down and off the stove top

Oh, this is going to destroy stove tops! Bridging two burners with that super hot mass? Tried it once long ago with a CI griddle. Never again!

I hate it when I go to the kitchen for food and all I find are ingredients!

Here we go again!!! Actually, when we did the group buy last year for the regular round one, the owner was great to deal with. Love mine.

    I'd be interested

  • I've now used my baking steel three times and I have nothing but praise for the product.  +1 @Greeno55 -- Andris was great to deal with.

    Looks like a great product.

That said, even without the rim, it works well as a griddle on the egg.
I will never cook inside again.

can't I just take my old one to a machine shop and have them machine out a groove?

    I guess so.

I don't have one at all though, and even if I did, I have no idea where to find a magic shop. Er, machine shop. Same thing to me!

Why the fascination now? Hungryman was doing this on the egg 4 years ago.

Read a post somewhere where the guy said his dad had been cooking on a steel plate for 40 years!!

Use your baking steel if you have one that fits your egg. Or go to a steel dealer and pick up a piece of A36 scrap for a buck a pound. I just did it 2 days ago.

Just don't use a steel on your stove top unless you have a high end stove that is all cast iron. You will discolor the top otherwise. Been there.

Use it as is, long as the surface you egg is level.  Similar to a "juice groove" on a cutting board, completely useless.  More for asthetics.

For griddling, all you need is a thin layer of fat to coat.  When/if the grease builds up during the cook, I take tongs and a paper towel, briefly soaking it up.  Then the paper towel can be used to light your next fire.

Good point.  Used to have a #8 rectangular two burner griddle.

Someone will burn their house down with one of these.

I may delegate the Weber kettle to the Baking Steel griddle going forward.  The charcoal baskets combined create a perfect heat and smoke source.

1/4" is plenty for a good sear.  Anything thicker and heavier is almost too good at transferring energy.  At least that is what folks on the pizzamaking forum discovered.

There is a line between Maillard and burning.

I just bought a raised grid for my XL and the dealer said he had ordered something like this, but it was cast iron and should sit on top very well. I may have to get one.

My mom was right... I am a genius.

I'm curious as to how much interest this will generate. Seems like the egghead market was nearly saturated with the last group buy. Plenty of folks used it as a griddle/skillet. How many will spring for this one?
