Commodity Spares Ribs...Pictures

I went to the business Costco today and they had Commodity Ribs at $2.28 lb....our business Costco has all the types of ribs, loin back (baby back), St Louis, Spares and Commodity.....we like the Commodity Ribs because of the great flavor....Commodity Ribs weigh about 5 1/2lb per rack, they are Spares not trimmed. These will cook around 3 hours at 225 degrees (controlled by Stoker) then I will increase the temp to 275 to finish. Between 5 to 6 hours total time. These are the same kind of ribs sold in the BBQ joints in Oakland years ago. I use Mesquite lump charcoal, Hickory chunks and chips, no sauce, no wrapping. I let people put on their own sauce

With spares you can get excellent results using 275 for the entire cook. No need to start lower unless you just want too. 275 is actually perfect for spares.

The business Costco I use is in Hayward California..... The business Costco caters to businesses mainly to restaurants.... They have items not found in the normal Costco

Going to have to try these. Have a biz costco I go to for full packer briskets but didnt look for these. Thanks for the tip. All the regular costcos here only sell flats. 3.25lb for a choice packer is a pretty good deal. At least in so cal

Nice looking ribs. Our local Safeway had spares for about $3.50 a pound, weight about 2 to 2-1/2 a rack. Maybe this week....Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!

The question was asked on the other forum, is this all the charcoal that I used for a six-hour cook? That is all the charcoal I use..... Most of the charcoal I used was what was remaining after a 16 hour cook of a brisket.... Here is the picture of the remaining charcoal after the rib cook
