XL Woo arrived

Having a hard time picturing your setup.  Do you have a plate setter, or some other kind of indirect piece?  DO you plan to place the Woo on top of the SS grid, and use the small ring as a support for a raised 20" grid above?  That could work - I've thought of trying it.  So many options, so little money...;

I rarely take the Woo out of the XL.  Last night I did some filets raised on the SS grid until about 15 degrees shy of desired doneness, rested for almost 10 minutes.  While resting the meat, I put a smaller grid on the lower ring, and a CI griddle on that.  Added a little Arbequena OO, and seared 1 minute on each side.  Dinner guests said it was the best meal they had ever had.  It was very yummy!!  The Woo really adds a lot of versatility.  I also have the lump reducer rings, that I use most of the time with the Woo.  Still provides plenty of burn time.  CGS rocks!!

I see. Thats a good way to raised your grid. I never thought to use it that way. 

Well, I have the AR so I use that for raised grid. I use the Woo2 for indirect with the stone ( i have the plate-setter too). I also use it for wok cooking. I bought the 19" wok with my AR order. 

Funny that you posted this because after my cook tonight I was upset with my XL Woo2 setup. I tried tbone steaks on a 18" CI grate lowered to right above the lump. I did the same batch of steaks a while back using a CI skillet and they came out much better. It could be the CI grate is not seasoned enough but I'm starting to question the wisdom of both the 18" CI grate and the Woo2. I will probably post something specific later.
