Mr. bone in turkey breast(s), meet the injector.  Scheduled for tomorrow.  I'm going to remove the backbone and lay it flat on the AR, high in the dome, indirect, tree fiddy till 160.

    Lemme ask ya.  I was just going to cut out the backbone and not do the breast pushdown to crack the ribs. What do you think??

    If you are going indirect I don't think it will matter too much if you flatten it or not.  My $.02.

    Sir one thing to consider if you don't flatten. If you go real high in the dome and don't flatten the entire center of the bird will be closer to the dome than the rest and you run the risk of over browning or worse over cooking this area. Just some good for thought my friend .

    @henapple. Depends on whether you want to just roast it or to expose it to as much smoke as possible. At 325-350, I've done them in 1.5 to 2 hours. At 250-275, they take 2.5 to 3 for me.

    This one will not be smoked as I can't find any maple around town.

    Prior to surgery, the weight was 7.75lbs.  Post surgery, post injection, 4.75lbs (just pepper and a little pink salt on the skin).  Resting in the fridge.  I did forget to smash to crack the ribs and it's too late now, so we'll see how it goes.  My neighbor saw it and immediately said, call me when its done cuz I get the skin!  And by the way, that damn marinade is incredible.  It tastes like butter with jalapeno flavor.  There is zero heat to it.  Not sure how Tony pulled that off.  All I know is the wife is happy because it has zero calories.  Not sure how Tony pulled that one off either.

    Too late to put my vote it, but from my experience it's easier to or clever the ribs out instead of trying to break the breast bone. You get 2 halves which makes it easier to make two separate flavors. Looks great.
