That looks great. I have been attempting to do a brisket or two each month and they seem to get better and better with continued practice. I will have to give this one a try.

With a dome of 225 what were you showing at the grate? It seems awefully low for a dome temp for only 12 hours.

me,[p]I didn't measure temp at the cooking grate. The brisket was only a two pounder. Is I mentioned, I do not have a consistent record of success with brisket, so I tend to stay with the smaller ones until I master a good technique. This one cooked (reached 200 degrees) in nine hours. [p]Smokey

Excellent looking piece of brisket there my friend.[p]I think you could easily step up to a full brisket now and probably have even better results.

Bobby-Q,[p]Just have to find a good source. The meat cutter at Publix told me that he's only getting 1-2 lb pre trimmed briskets now. Maybe Costco or Sams.[p]Smokey
