Smoking my first turkey on egg. 12 pound, using plate setter & V-Rack with drip pan. Started with full charcoal. Suppose to cook at 350.
Bottom vent full open top open. I can't keep at 350. Stays around 300.
What am I doing wrong ??

Something has to be blocking your airflow, or your firebox isn't properly aligned with your vent.
did you clean out the ash before you started? Did make sure all the grate and firebox holes were clear?

Yes I did, could see holes in bottom grate. Should I stir the coals to move them ?

How much lump did you put in? Full to the top of firebox? If so, then its an airflow issue. Use a wiggle rod (fab one from a wire coat hanger if you don't have one) and reach in the ash door and wiggle the fire grate in a few places.They/Them

Try reaching in with the ash tool and tapping the heck outta the lump grid and see if that helps. Leave the vents wide open till u see the temps rise...MSV Chill Spot
