SWMBO requested I make Spatchcock this week. Today was an early day for me at work. Went to Publix and grabbed a 6.89# roaster chicken, baking potatoes and asparagus. Doing it Spatchcock with simple EVOO, kosher salt and coarse black pepper, potatoes with same & asparagus with 1 stick sweet cream unsalted butter with real lite kosher salt and coarse grain pepper. I know watcha are thinking you've seen one Spatchcock you've seen em' all ;-). This was a no fuss relaxing cook. Enjoy. Happy egging. And I'll leave with this (as my late cousin would sign off with)...Share a smile and a kind word...make a stranger smile...Hugs. (RIP W.T Fitch).

@Husker_13...I'm a Husker born and raised and will be still I'm stiff and cold. But, also a huge Broncos fan. And also cheer for Jags as a local here in Jax. GBR!!! Go Broncos! Obviously I have Husker jerseys but, this was on Bronco game day. I have a Husker quilt that was made from t-shirts etc from over 30+ yrs.
@pretzelb...I put the chicken and potatoes on at the same time (raised direct 375F-400F) flip potatoes at 30min then 2nd side pull at 30min and HDAF until meal complete. @Jeremiah gotta love a good lager. I actually just dusted off two Yuengling Premiums. I went to college near Pottsville and lost the taste for Lager. We drank soooo much of it in college. These days Lager only happens a few times per year. If you haven't tried Premium, you should. Good stuff.Mark Annville, PA

@Mike_the_BBQ_Fanatic. Thanks. And that joker is crazy soft and warm (the inner liner is red and black plaid with heavy batting. Love this quilt like Lynus :-). Hard to see but, one of the tiles on this is picture prints of me circa 72 ish in Husker gear. SWMBO really makes each Christmas special.
