Last night's paella mixta cook went predictably well. I only use Bomba rice. Sometimes I cheat and use ground american safflower instead of wildly expensive saffron threads (this is a combo). I also use spanish paprika and lots of fresh rosemary.
This mixta included chicken thighs, chorizo, shrimp and clams.
The beginning: chorizo and chicken.

That's it...paella this week. Nice cook.Green egg, dead animal and alcohol. The "Boro".. TN

Rice and stock goes in. Redistribute. I season my chicken with kosher salt, freshly ground black pepper and paprika. I mix the saffron, rosemary and more paprika with the Bomba rice before I add it to the paella.

Finish with green beans and serve.
Cook at abt 450 degrees. I add some pecan chips for a little smoke. -
Make SURE you let it cook enough to get the soccorat. Serve with Meyer lemon wedges if you can find Meyer lemons.

Trust me-you can do better than 22 years...besides paella will enhance those years! >-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

It's really not that difficult. Get a paella pan at Target for abt $20. Find Bomba rice - this is critical. Don't skip the tomato pulp and then be patient enough to get plenty of soccorat on the bottom. It's what makes the dish so special.
