OK Convince me to Turbo my Butt

    I turboed a 7 pounder yesterday in 5 hours 20 minutes. Indirect at 350 using inverted foil covered PS. Used Mickey's Rub and some ol' yeller mustard, and went nekked with no foil. Tasted great - once you go turbo you'll never go back!

    I'll probably only do turbo from here on. I skip the mustard and use Dizzy Pig Jamaican Firewalk.

    XXL BGE, Karebecue, Klose BYC, Chargiller Akorn Kamado, Weber Smokey Mountain, Grand Turbo gasser, Weber Smoky Joe, and the wheelbarrow that my grandfather used to cook steaks from his cattle

    Not speakin for Ron but it would be legs up and the ps covered in foil

    Im only an hour into these butts. 3 of them on. I might bump it up to 350 and we can have some for dinner tonight? Will I get the same bark?

    You get a nice crispy bark with a juicy & tender meat. I like it better than low & slow.

    Oh yeah, I'd FTC for at least an hour to let the juices redistribute.
    I raise my kids, cook and golf.  When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.
    Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

    Done tomorrow AM and not eating til 6? Too long for FTC. Borderline anyway. If you want to eat at 6 (PM, I presume), you don't need to put it on until 11-12. 

    EDIT... Maybe start at 9-10, depending on the size.

    If you think you are ahead of schedule, go hybrid at 300F instead of 350F to stall the cook. btw, don't forget the butts love Mickey's Rub, kidding!

    This is what makes me debate getting a pit controller. Without one, I have the excuse of needing to watch the egg for as long as the cook takes.

    The difference, IMHO, between deciding to turbo or low n slow is really based on three factors.  1) You got too drunk the night before to put the low n slow on for the next day.   2) You had the fortitude to put it on the night before while drunk without worrying about burning the house down, but it cooked turbo anyway and was done at 6 am and you decided to spin it as "turbo".  3) You like the bacon-like high temp cooked bark flavor of a turbo and even though you're a insomniac tea-totaller, you CHOOSE to cook for that flavor profile. 

    I can't decide which category Mickey fits in (hint not 3), but I'm sure being Irish factors in.  :D
