Looking for a relatively simple Mexican/Tex-Mex cook on the egg

Got this recipe from SSN686 at the GA Mountain Eggfest....really good....

  Mexican Casserole
   2      bags          Doritos  (Nacho Cheese) (Spicy Cheese)
   2      lbs             Ground beef, cooked and drained
   2      cans          Ranch Style Beans (original), drained
  16      oz             Mexican Four Cheese, shredded
   1      cup            Green onion, finely chopped
   2      cloves        Garlic-minced
   2      tsp             Chili powder
   2      cans          Rotel (original), not drained
   1      can           Cream of Chicken Soup
   1      can           Cream of Mushroom Soup

1. Brown ground beef with garlic, onion and drain.

2. Crunch 1 bag of Doritos in the bottom of the dish.

3. Layer ground beef on top of crushed Doritos.

4. Mix Rotel, Cream of Chicken soup, and Ranch Style beans together and pour
over the ground beef.

5. Add another layer of Doritos.

6. Top with cheese

Comments: Bake in lasagna size pan. Direct or indirect

Pozole is awesome on the egg.

I have done fajitas,enchiladas, chicken and beef tacos and carna asada on the egg. Pretty much any recipe you like you can make in the egg. If it say says bake then you egg.

How do you get some good mexican flavor into beef.

I have tried cooking a steak marinated in Modelo beer, cilantro, lime juice and onions and then cooked on the Egg but wanted more mexican flavor besides plain tasting bell or jalepeno peppers.  Maybe a sauce?  Maybe a different type of beef other than flank steak?

What about a pulled beef recipe mexican style?

Don't forget the lowly home made tortilla cooked on a cast iron comal...  Heaven.

Skirt steak or flap meat make great carne asada.
