Slicing Knife Recommendation

This is my favorite slicer. The blade itself is 12" and the whole knife is 17.5". I first saw it in use professionally years ago and decided why not buy one even if I didn't use it frequently...you know the adage about boys and their toys!Re-gasketing America one yard at a time.

That's a good looking knife!

CutleryandMore.com has the 12 incher for $60 and the 14 incher for $80.

I've been coveting a slicer to add to my collection. I don't do a lot of slicing (as opposed to carving), but when I get the idea I need something, Katie bar the door. The Victorinox 40645 looks interesting - does anyone know the difference between that and the 47645?Santa Paula, CA

How do you know Travis, have you used it yet? What schmuck recommended that knife? :Ptravisstrick said:Sani Safe Roast Slicer Sani-Safe http://www.amazon.com/dp/B004NG98RI/ref=cm_sw_r_udp_awd_egJmtb1QJPWX4

chefknivestogo.com has a Richmond Artifex Sujihiki 270mm for 90 bucks. I've heard good things and its great for fish along with roasts due to it's flex. Made for them by Lamson & Goodnow.

I almost pulled the trigger on the Shun Reserve Slicer - Williams Sonoma had a 20% off one item w/free shipping sale. I put it in the cart, and entered the discount code, only to find out that Shun was excluded from the sale. I really didn't want to spend that much on a slicer anyhow. This morning I found the sale on the Wusthof Brisket Slicer and saved myself a pile. Now if I can be thrifty, maybe some day the Premier Carving set will be in my block.
Several weeks ago, chefknivestogo had a sale on the 210mm Goko Gyuto, and that has turned out to be a very nice knife - it comes very close to making the carving knife unnecessary. It has a very thin and sharp Damascus blade - not Shun quality, but real functional. They are still on sale, BTW.

Kyocera ceramic knives. Just have to be careful cutting around the bone. We've had ours over a year and they still slice meat like butter.Steven

@gdenby, I grabbed the 210mm for my wife as she has really picked up on using my Japanese steel. It's a beautiful knife in person and she loves how it cuts. It has a right-hand bias so I haven't used it. The handle is gorgeous as well.
