First Saturday of Spring...

The weather is supposed to be beautiful for the 1st Saturday of Spring. My cook plan for later today is for some bacon cheeseburgers. Maybe throw that corned beef brisket on before that since it shouldn't take more than 6 hours or so to turn it into pastrami, much easier going from a low n slow to a higher heat direct cook like burgers than the other direction.
There will likely be a stick or two along with some adult beverages during the day as well.

Well...
The boys were at the groomers at 7, then on to getting a quick detail for my truck. After that, I went and joined Sam's club. Checked out the meats, no packers and the prices were better but not earth shattering. I did save a ton on aluminum pans, 30 of them for $6 vs paying almost $2 each at Wegmans. I also picked up a new table and have changed my egg set up. I don't need the work lights anymore since I'm using a head lamp. It's on less, targeted better, and doesn't draw as many bugs...
Leaving Sam's I witnessed on of the greatest DIY fails that I've seen in a long time. I can only hope that there are cameras nearby when this decides to let lose at 60mph.

It is turning out really nice down in B'more, too bad most of my cooking tasks are inside. I'll have some lamb chops and sweet potato on the egg for dinner though, and I'll get a brisket ready to go on tomorrow morning.

Attempting the pastrami this afternoon. Rubbed with salt, pepper, paprika, onion powder, and garlic salt. Indirect at 275-300 to the IT is about 170. After that I'll so the cheese burgers...

Took my pastrami to 170 and wish I had taken it longer. Granted you don't want fall apart meat but when I bit in my sandwich the pastrami wanted to pull out of the sandwich instead of a clean bite thru. I ended up steaming it to fix the issue the next day for lunch. My .02 oh and the marble rye from wegmans is awesomeLBGE& SBGE———————————————•———————– Pennsylvania / poconos

Changed the batteries in the mavericks but no luck... Is it the probes causing the LLL reading? Anyone know anything about it?

Hey Hap, sortofa neighbor here. Loved the weather, but unfortunately the day was spent cleaning up all the huge branches that fell a month ago. Much of it is done, what is left needs to be done by professionals. Too pooped to do much other than grab some hard cider that I made in the fall. Anyway, I did want to egg today, but SWMBO put some turkey tenderloins in oven with convect roast and will add some spuds and carrots soon.
I have made the pastrami a few times, but have learned to soak out some of the salt over ~ 48 hours first to try to prevent it from being too salty. I may go ahead and make some beef jerky tomorrow. After the cider, there will be some dbl oaked for later...

Pastrami is off and in the fridge. The Bubba's were cooked, topped with bacon and American and dinner was quickly consumed.
